I highly suggest her show “Time to Eat” on Netflix (here’s her book too), though I make my own tweaks to her recipes.

Anyway, here’s the easy ice cream recipe. Pick your own flavor, also I suggest buying these containers from Amazon, they keep the ice cream perfect. This recipe makes about a Ben & Jerry’s pint of ice cream.

Ingredients:

One 14oz can sweetened condensed milk (vegan option)

1.5 cups heavy cream (vegan option)

1 tbsp vanilla

1 tbsp other flavoring (cocoa powder, peanut butter powder, strawberry syrup, pureed bananas, instant coffee, etc.)

Anything else you want to add you can eyeball it

1 large bowl

Electric beater/mixer

Procedure:

Whip the heavy cream using an electric beater/mixer – trust me go electric its way faster than whisking by hand – whip until just before stiff peaks form, then add your flavoring, then whip until stiff peaks actually form

Put the vanilla into the sweetened condensed milk can and mix it around with a spoon

Pour the sweetened condensed milk into the whip cream bowl and fold it together until most, if not all, of the clumps are smooth – don’t over mix though, because you want to keep the airy-ness from the whipped cream

Pour the whole mixture into a metal bread pan or other similar metal container, or pour into an ice cream tub (see suggestion above)

Freeze for a minimum of two hours, then enjoy!

Notes: Be aware, this is super, super rich ice cream. You may not need more than one scoop! The photo above is from a dual flavor, I split the ingredients into two whipped cream bowls and added coco powder to just one in order to get a chocolate/vanilla batch. Another I did was peanut butter powder in half and cocoa in the other half. I’m excited to pick up some dried prickly pear powder this weekend from Uptown Market in Phoenix, to try a half local honey, half prickly pear ice cream!

Update: They didn’t have the prickly pear powder so I used syrup… don’t use syrup, the pectin messes up the texture. I would also advise against honey in the ice cream, again texture (just drizzle it on top or make swirl layers). Lesson learned, don’t put syrup into the ice cream mixture – always use a powder (cocoa powder, peanut butter powder, etc.) or extract.

First off, kudos to Nadiya Hussain from Great British bake-off for this recipe.
